Kale Pesto Pasta with Vegetables

Ingredients:
For the Pesto sauce:
1/4 cup walnuts
2 cloves garlic
1/4 cup olive oil
1/2 cup fresh basil leaves
1 cup fresh kale, stems removed
1/2 cup shredded Parmesan
1/2 cup water

For the Pasta:
1 tablespoon oil
1 medium zucchini, diced
1 medium squash, diced
1 cup red bell pepper, julienned
1 cup mushrooms, sliced
1 cup kale
1 pound whole wheat pasta, cooked
Salt and freshly ground black pepper

Directions:
For the pesto: Combine all ingredients in a food processor and blend until combined and smooth.
For the pasta: In a saute pan over medium-high heat add the oil and the add onions, peppers and mushrooms. Stir and cook until softened. Add kale and pesto sauce and stir. Add pasta and stir. Finish seasoning with salt and pepper and serve.
